A delicious large sausage traditionally made using leftover cuts of pork that have been seasoned and encased in the pigs skin. Once we'd grown up, we were somewhat disappointed to be told that our masterpieces had actually ended up in the feeding bowl of Roll, my grandfather's bloodhound. You'll find thiamin, phosphorus, niacin, selenium and vitamin B-6 in your average cut, not to mention protein and a decent amount of zinc, riboflavin and potassium.
